John Payne - Executive chef / Director of Food & BeverageSince January 2017, Chef John Payne has served as executive chef at Hotel Boulderado's Spruce Farm + Fish, The Corner Bar and License No. 1. His extensive experience working for highly acclaimed, farm-to-table restaurants on the West Coast, combined with several years of hospitality experience with Grand Hyatt hotels make him perfectly suited to oversee Hotel Boulderado's three restaurants.
Chef John spent ten years working his way up the ranks at several well-known San Francisco restaurants, most notably Jeremiah Tower's Stars. He finessed his culinary skills in Seattle, working under James Beard Award Winning Chefs Tom Douglas and Jerry Traunfeld at their respective Seattle-area restaurants.
In 2008, Chef John was tapped to handle the opening of the new Grand-Hyatt Seattle's restaurants and enjoyed several years working for Hyatt, where he gained first-hand experience in the balance of hotel and restaurant responsibilities. At Hotel Boulderado, Chef Payne is charged with helping develop the brand identity for Spruce Farm Fish, which operated under a different name and separately from the hotel for many years. He also oversees The Corner Bar, a longtime Boulder favorite, and License No. 1, which holds the city's first liquor license after prohibition.
